Waterford Dunmore Edition 3.1 Single Malt Irish Whiskey

Waterford · Waterford Distillery

100 proofNASWaterford, Ireland
Waterford's terroir-driven approach finds its purest expression in single-farm bottlings like Dunmore. This third edition shows a whiskey that is simultaneously mineral-heavy and feather-light — grounded in the earth it came from, yet lifted by careful distillation and precise cask management.

Tasting Notes

Nose

Bright and green — cut grass and green apple dominate, with a floral rosewater delicacy underneath. Honey and malt arrive with time, along with a faint mineral earthiness that speaks of the farm's terroir.

Palate

Medium-weight with a waxy, almost ethereal texture. Peach and vanilla carry the midpalate, while a gentle clove spice emerges on the back end. The barley character is clean and expressive.

Finish

Medium-long, with lingering honey and a return of that green, grassy freshness. A slight woody dryness closes things out.

The Story

At Waterford Distillery, former Bruichladdich visionary Mark Reynier traces each bottling back to a single Irish farm, cataloguing soil, aspect, and barley variety to prove that terroir belongs to whiskey as much as wine.
