Bourbon Woodinville Straight Bourbon Whiskey Port Cask Finish

Founded in a Woodinville, Washington garage by two friends obsessed with local grain, this distillery ages its bourbon in the extreme temperature swings of the Cascade foothills, letting the Pacific Northwest climate do the heavy lifting.

Cocktail — Cascade Manhattan — 2 oz Woodinville Port Cask Finish · 1 oz sweet vermouth · 2 dashes Angostura bitters · Stir over ice, strain into a coupe, garnish with a brandied cherry.

Pair with: Pan-seared duck breast served with a tart cherry gastrique, roasted root vegetables, and wild rice — the dark fruit in both dish and bourbon amplify each other.

Scotch Whisky Kilchoman 100% Islay 13th Edition

Islay's farm distillery grows its own barley in the rocky fields surrounding the stillhouse, malts it over their own kiln, and bottles the whisky entirely on site — a true field-to-glass operation on Scotland's peatiest island.

Pair with: Freshly shucked oysters smoked lightly over apple wood, served with a classic shallot-red wine vinegar mignonette — the brine and smoke mirror the whisky's coastal character.

Irish Whiskey West Cork Single Malt Rum Cask Finish Irish Whiskey

Three friends founded West Cork Distillers in the town of Skibbereen on Ireland's wild southwest coast, where the salt-laden Atlantic air infiltrates the warehouses and gives the maturing spirit its particular maritime edge.

Cocktail — Cork & Stormy — 2 oz West Cork Rum Cask · 0.5 oz lime juice · 3 oz ginger beer · Build over ice in a highball glass, stir gently, garnish with a lime wheel.

Pair with: Slow-roasted pork belly glazed with wildflower honey and cracked black pepper, served with braised cabbage — the sweetness and malt of the whiskey echo the caramelized pork.

Tequila Cimarrón Añejo Tequila

Built by Enrique Fonseca — the same distiller behind Fuenteseca and Tequila Ocho — Cimarrón was designed as an unapologetically honest highland tequila, made cleanly at NOM 1146 in Arandas and sold at a price that quietly embarrasses most of its shelf neighbors.

Cocktail — Ground Current — 2 oz Cimarrón Añejo, 0.75 oz Amontillado sherry, 0.25 oz agave syrup (1:1), 2 dashes Angostura bitters, 1 dash orange bitters. Stir with ice 25–30 seconds, strain into a chilled coupe or rocks glass over a single large cube. Express an orange peel over the top and drop it in.

Pair with: Cochinita pibil tacos with pickled red onion, or a plate of aged Manchego with quince paste and toasted almonds — both echo the tequila's caramelized agave and mineral backbone.

Awards: Consistently recognized as a category value benchmark; frequently cited in trade press and by tequila critics (including Tequila Matchmaker top-rated lists) as one of the best sub-$40 añejos on the U.S. market.

Gin Corsair Steampunk Gin

Founded in 2008 by childhood friends Darek Bell and Andrew Webber in a Nashville garage, Corsair Artisan became one of the first American distilleries to translate the experimental ethos of craft brewing into spirits — hopping their gin like a pale ale and building on a malted barley base.

Cocktail — Ground Wire — 2 oz Corsair Steampunk Gin, 0.75 oz fresh lemon juice, 0.5 oz honey syrup (2:1), 3 dashes celery bitters, top with 1 oz chilled IPA. Shake gin, lemon, honey, and bitters with ice; strain into a chilled coupe and float the IPA. Garnish with a lemon twist.

Pair with: Grilled trout with charred lemon, or a sharp aged cheddar with rye crackers and pickled mustard seeds.

Awards: Silver Medal, San Francisco World Spirits Competition; recognized in Garden & Gun's Made in the South Awards for its innovative approach to American gin.

Rum Rhum Agricole Blanc Cuvée Caribaea

On Marie-Galante—a limestone disc floating in the Caribbean just south of Guadeloupe—Distillerie Poisson has pressed cane and distilled rhum since the late 19th century. The distillery draws its water from wells drilled through coral rock, and its cane grows in iron-rich volcanic clay that retains the island's heat like a battery. The Cuvée Caribaea bottling is designed to showcase this raw geological charge: fresh cane juice fermented with wild yeasts, single-pass distilled through a copper Creole column, and bottled unaged at 50% ABV. There is no barrel to mediate, no blending to smooth. What reaches the glass is pure current—the voltage of Marie-Galante's terroir transmitted without resistance. In an era when most spirits obscure their origins, Poisson strips everything back to let the ground speak.

Cocktail — The Ground Wire — Muddle 3 thin slices of fresh ginger and 2 lime wheels with 0.5 oz raw turbinado syrup in a shaker. Add 2 oz Distillerie Poisson Cuvée Caribaea and 0.75 oz fresh lime juice. Shake hard with ice and double-strain into a chilled coupe. Top with 1 oz chilled sparkling mineral water. Garnish with a thin sugarcane stick and a pinch of flaky sea salt on the rim.

Pair with: The rhum's raw mineral backbone and cane-bright acidity mirror the smoky char and briny sweetness of grilled octopus. A peppery herb salsa verde—parsley, cilantro, capers, anchovy—echoes the spirit's herbal mid-palate while the charred lime's bitterness amplifies the finish's volcanic mineral hum. Together, they create a circuit of smoke, salt, and earth.

Red Wine Domaine de la Tournelle Arbois Trousseau 2021

Pascal and Evelyne Clairet farm their steep Jurassic limestone vineyards biodynamically in the village of Arbois, coaxing Trousseau — a variety that barely exists outside this corner of eastern France — into wines of startling transparency.

Pair with: Aged Comté from the Jura paired with tangy cornichons and crusty sourdough — a regional pairing where the nutty cheese and the wine's minerality amplify each other's sense of place.

White Wine Domaine Barmès-Buecher Riesling Grand Cru Hengst 2022

Geneviève and François Barmès converted their family domaine to biodynamic viticulture in Wettolsheim, coaxing Riesling from the warm, south-facing calcareous-marl slopes of Grand Cru Hengst into wines of uncommon power and geological specificity.

Pair with: Alsatian Munster cheese sprinkled with caraway seeds, served with warm pretzel bread — the wine's acidity and mineral density cut through the cheese's richness while honoring the regional tradition.
