Woodinville Straight Bourbon Whiskey Port Cask Finish

Woodinville · Woodinville Whiskey Company

90 proofNASWashington, United States
Woodinville's port cask treatment is restrained and purposeful, adding complexity without masking the spirit's Pacific Northwest grain identity. The Washington terroir — its climate-driven maturation cycles — produces a bourbon with genuine depth. An excellent example of what regional American whiskey can be.

Tasting Notes

Nose

Port-stained cherry and brown sugar open the glass, followed by warm vanilla and a touch of dried orange peel. Beneath that, there's a subtle earthiness — damp grain and toasted oak in harmony.

Palate

Rich and coating, with dark cherry preserves meeting butterscotch and caramel corn. The port influence adds a plush fruit layer without drowning the bourbon character. Baking spices and a hint of leather emerge on the mid-palate.

Finish

Medium-long, with cherry lingering alongside charred oak and a final whisper of cocoa.

Cascade Manhattan — 2 oz Woodinville Port Cask Finish · 1 oz sweet vermouth · 2 dashes Angostura bitters · Stir over ice, strain into a coupe, garnish with a brandied cherry.

Food Pairing

Pan-seared duck breast served with a tart cherry gastrique, roasted root vegetables, and wild rice — the dark fruit in both dish and bourbon amplify each other.

The Story

Founded in a Woodinville, Washington garage by two friends obsessed with local grain, this distillery ages its bourbon in the extreme temperature swings of the Cascade foothills, letting the Pacific Northwest climate do the heavy lifting.
