Yamazaki 12 Year
Yamazaki · Yamazaki Distillery (Suntory)
Yamazaki 12 is a masterclass in balance and subtlety. It doesn't shout — it earns your attention through precision, layering flavors in a way that rewards patience. This is the bottle that put Japanese whisky on the global map, and it remains a benchmark for what elegance in single malt can look like.
Nose
An inviting wave of stone fruit leads — ripe peach and dried apricot — layered over a gentle honeyed sweetness. Underneath, there's a quiet floral character, almost like rosewater-dusted malt, with faint sandalwood and a wisp of clove spice. The nose is restrained and balanced, revealing itself slowly without ever pushing.
Palate
Silky and medium-bodied, the palate opens with honey and peach before transitioning into butterscotch and toasted malt. Mizunara oak influence shows itself in delicate floral and woody notes that distinguish this from its Scottish counterparts. A subtle clove spice and dried fruit sweetness develop mid-palate, giving the whisky real depth without heavy-handedness.
Finish
Medium in length, clean, and gently drying. Lingering honey and vanilla trail off alongside a whisper of oak and dried fruit, leaving a warm, composed impression.
Cocktail Suggestion
Kyoto Highball — 2 oz Yamazaki 12, 4 oz chilled sparkling water, expressed lemon peel. Build in a tall, ice-filled glass. Stir once gently. Garnish with the lemon peel.
Food Pairing
Lightly seared salmon with a yuzu-miso glaze, or a plate of aged Comté cheese with honeycomb and marcona almonds.
Crafted at Japan's first and oldest malt whisky distillery, founded by Shinjiro Torii in 1923 in the misty bamboo forests of Shimamoto, Osaka, Yamazaki 12 is the expression that catalyzed the world's love affair with Japanese whisky.

COS Cerasuolo di Vittoria Classico DOCG 2020
COS
COS was fermenting in buried terracotta amphorae before it became fashionable, and this Cerasuolo di Vittoria shows why the method endures. It's Sicily's only DOCG red expressed in its purest form — no oak distraction, just Nero d'Avola and Frappato in transparent conversation.

Domaine Roulot Meursault 2021
Domaine Roulot
Jean-Marc Roulot's village Meursault is a masterclass in restraint. Where others in this appellation lean into oak and richness, Roulot pulls back, letting the limestone speak. The result is Meursault stripped to its essence — no veneer, just truth.

Belle Meade Bourbon Reserve
Belle Meade
Belle Meade Reserve is Nelson's Green Brier at its most confident — proof-forward bourbon that never bullies the palate. The mash bill's corn-rye balance is on full display, making this an ideal study in how high proof can amplify rather than obscure complexity.

Craigellachie 13 Year Old
Craigellachie
Craigellachie 13 is Speyside's contrarian — a malt that wears its worm-tub-condensed character like a badge of honor. It trades polished elegance for muscular honesty, rewarding drinkers who appreciate texture and funk over refinement.

AnCnoc 12 Year Old
AnCnoc
AnCnoc 12 is a Highland malt that favors clarity over volume. It's an ideal entry into the style for those who equate 'light' with 'uninteresting' — there's real depth here, just expressed in a lower register. A weeknight dram that never bores.

Benriach The Smoky Twelve
Benriach
Benriach has always played the complexity card in Speyside, and The Smoky Twelve is their most accessible argument for peated single malt outside Islay. The triple-cask maturation creates dimension beneath the smoke — this is a bottle that changes character entirely from first pour to the last drop in the glass.

Balblair 12 Year Old Highland Single Malt Scotch Whisky
Balblair
Balblair's tall copper pot stills are designed to maximize reflux, and the result is a spirit of unusual purity and fruit-forward character for the Highlands. This 12-year-old balances accessibility with genuine complexity. Non-chill-filtered and naturally colored, it rewards attentive nosing.
