Palate

Medium-bodied and texturally generous, with ripe juniper at the core surrounded by waves of herbaceous thyme, green anise, a whisper of fennel, and warm white pepper. The Story

The result was something singular: a protected Geographical Indication gin (the only one in Spain) that tastes like its landscape. Each year, the cycle repeats: grapes ferment in autumn, juniper is gathered from windswept hillsides, and copper stills murmur through winter and spring. The rhythm hasn't changed in over two centuries.
