A profound expression of Wachau primary rock — restrained, ancient-feeling, and quietly powerful. Federspiel that drinks like a philosophy.

Tasting Notes

Nose

Wet slate and crushed river stones open the glass, followed by lime pith, white peach skin, and a whisper of chamomile. Time reveals honeyed apple blossom and a savory, almost saline mineral thread.

Palate

Taut and vertical on entry, with piercing lime and green apple driven by a spine of primary rock-dust minerality. Mid-palate broadens into yellow pear and a subtle herbal bitterness — thyme, wet fern — while the acidity remains chiseled and precise.

Finish

Long, stony, and softly saline, echoing citrus zest and a cool, wet-limestone coolness that lingers for over a minute.

Cocktail Suggestion

The Stonecutter's Spritz — 3 oz Nikolaihof Vom Stein Riesling, 1 oz elderflower cordial, 0.5 oz fresh lemon juice, 2 oz chilled soda water. Build in a large wine glass over ice, garnish with a thin cucumber ribbon and a sprig of thyme.

Food Pairing

Wiener schnitzel with lingonberry, or grilled river trout with brown butter and capers. Equally striking with green apple and aged Alpine cheese.

The Story

Farmed biodynamically since 1971 at Austria's oldest working wine estate — a Roman-era cellar in Mautern where the stones of the terraces have held vines for nearly two thousand years.

Domaine Trimbach Riesling Alsace 2022

Trimbach

Trimbach's entry-level Riesling is anything but basic. The 2022 vintage delivers the house hallmarks — razor-sharp acidity, bone-dry precision, and a mineral backbone that speaks of Alsatian limestone — at a price that makes it one of the smartest values in white wine.

Domaine Huet Vouvray Le Haut-Lieu Moelleux 2023

Domaine Huet

Domaine Huet's Le Haut-Lieu Moelleux is an exercise in controlled sweetness — the heat of the 2023 vintage concentrated sugars that the biodynamic estate's limestone soils kept in perfect tension with acidity. It is a wine that tempers richness with structure, proof that fire from above (sun) and below (mineral-rich stone) can collaborate to extraordinary effect.

Domaine des Roches Neuves Saumur Blanc Terres Chaudes 2023

Domaine des Roches Neuves

Thierry Germain's biodynamically farmed Chenin Blanc from the Terres Chaudes parcel delivers a wine where the tuffeau limestone substrate is as much a character as the grape. Wood plays virtually no role here — the expression is all terroir, acid, and fruit. A white wine for those who believe restraint is its own form of generosity.

Donnafugata Ben Ryé Passito di Pantelleria DOC 2022

Donnafugata

Ben Ryé is Italy's most celebrated passito, made from Zibibbo grapes sun-dried on the wind-blasted volcanic island of Pantelleria. The heat of the African-influenced climate concentrates sugars, but Donnafugata's meticulous winemaking preserves acidity and freshness. A dessert wine that transcends the category.
