Tequila Tapatio Excelencia Extra Añejo
The Camarena family has been making tequila in Arandas since 1937, and the Tapatio distillery feels less like a factory than a workshop — stone tahona wheels grooved by decades of crushing, copper pot stills patinaed green, wooden fermentation tanks whose staves have absorbed generations of yeast cultures. Excelencia, the family's crown jewel, spends four years in American oak barrels that have themselves been used and reused, each cycle softening their contribution and allowing the spirit's agave heart to remain legible. Master distiller Carlos Camarena speaks of extra añejo aging not as transformation but as 'wearing in' — the way a craftsman's tool becomes more effective through years of faithful use. Pair with: The spirit's dark chocolate, coffee, and warm spice notes find a natural counterpart in mole negro — that painstaking sauce built from charred chiles, chocolate, dried fruits, and toasted seeds. Braised turkey provides a lean, savory canvas that lets both the mole's complexity and the tequila's barrel-worn depth harmonize without competing. The pairing celebrates the Mexican tradition of slow, patient cooking — ingredients transformed through time and attention into something greater than their parts.

Gin Bols Genever Barrel Aged
Lucas Bols holds the distinction of being the oldest distillery brand in the world, established in Amsterdam in 1575 — a full two decades before Shakespeare wrote Romeo and Juliet. For centuries, genever was the original juniper spirit, the ancestor from which London dry gin eventually descended. But while gin ran off to conquer the British Empire in crisp, botanical splendor, genever stayed home, aging quietly in oak, its malt wine base giving it a depth and warmth that gin abandoned in pursuit of clarity. The Barrel Aged expression returns to this oldest of traditions: a malt wine base distilled in copper pot stills, infused with juniper and botanicals, then rested in French Limousin oak casks for 18 months. The result is a spirit that carries the literal patina of its wooden aging vessels and the figurative patina of nearly 450 years of continuous craft. Master distiller Piet de Jongh has described the barrel aging as 'letting the spirit remember where it came from' — a fitting philosophy for a spirit that predates the very category it helped create. The mostarda's candied fruit and mustard heat amplify the spirit's ginger and orange peel notes, while dark rye crackers echo its malty backbone. Together, they create a pairing where every element has been improved by patience, where age is not decay but deepening.

Rum Mhoba American Oak Aged Rum
Founded on a family sugarcane farm in the shadow of the Drakensberg escarpment, Mhoba presses its own cane and ferments the fresh juice on-site — a rarity outside the French Caribbean — before aging the spirit in tired ex-bourbon casks whose seams have already told other stories.
