Domaine Sigalas Assyrtiko Santorini 2023
Domaine Sigalas · Domaine Sigalas
Sigalas is widely considered Santorini's benchmark Assyrtiko producer, and the 2023 vintage demonstrates why. Ancient, ungrafted, basket-trained vines rooted in volcanic ash produce a wine of extraordinary mineral intensity. This is the vinous equivalent of licking a sun-warmed volcanic rock — in the best possible way.
Nose
Intense lemon zest, crushed chalk, and sea spray open the nose. Beneath sits white peach, green apple, and a pronounced flinty minerality that defines Santorini Assyrtiko.
Palate
Razor-sharp acidity frames flavors of citrus pith, saline minerality, and unripe pear. The volcanic pumice terroir delivers an almost electric mineral quality — less fruit-driven, more stone and salt. Excellent weight and texture despite the lean, dry profile.
Finish
Long and bracing with persistent minerality, a bitter lemon twist, and a saline close that demands another sip.

Food Pairing
Charred octopus with capers, lemon, and extra-virgin olive oil mirrors the wine's saline minerality and citrus brightness, while the octopus's smoky char complements the volcanic terroir notes.
Paris Sigalas, a mathematician who turned to viticulture in 1991, farms ancient kouloura-trained Assyrtiko vines on Santorini's volcanic caldera, where phylloxera-free rootstock grows directly in pumice and volcanic ash.

Feudi di San Gregorio Fiano di Avellino DOCG 2023
Feudi di San Gregorio
Fiano di Avellino is one of southern Italy's noblest white grapes, and Feudi di San Gregorio has been its most consistent ambassador. The 2023 delivers the grape's signature interplay of fruit richness and mineral tension at a price that makes it an easy recommendation. A serious food wine that punches well above its weight.

Pieropan Soave Classico Calvarino 2022
Pieropan
Calvarino is Pieropan's demonstration that Soave can be a wine of real complexity and ageability. The 2022 vintage captures the vineyard's volcanic character with precision, delivering a wine that overperforms its modest price point by a wide margin. This is the kind of bottle that converts Soave skeptics.

Graci Etna Bianco DOC 2023
Graci
Alberto Ferrara's Graci estate farms pre-phylloxera vines at high altitude on Etna's north slope, producing wines of remarkable tension and purity. The 2023 Etna Bianco from Carricante grapes delivers volcanic terroir in the glass — mineral, saline, and vibrating with energy. This is one of Italy's great white wine values.

Domaine Thibault Liger-Belair Bourgogne Blanc Les Charmes 2023
Domaine Thibault Liger-Belair
Thibault Liger-Belair is better known for his Nuits-Saint-Georges reds, but this Bourgogne Blanc demonstrates the same meticulous farming and minimal intervention approach. It's an honest Chardonnay that lets the limestone soils of Burgundy speak clearly. Outstanding value.
