Patrick Baudouin is one of the Loire's most thoughtful biodynamic vignerons, and Les Zersilles showcases Chenin Blanc's ability to be simultaneously generous and restrained. This is a white wine with genuine intellectual depth — each sip reveals another layer of the volcanic schist terroir that defines Baudouin's parcels in Layon.
Nose
Ripe pear and apple blossom open the nose, with a distinctive honeyed note and a lift of citrus zest. Underneath, a flinty mineral quality and faint green herb complexity reveal the schist soils of the vineyard.
Palate
Medium-bodied and textured, with honeydew melon and quince flavors framed by a bright, almost electric acidity. A subtle woody note from brief oak contact adds depth without weight, and a saline mineral streak runs through the finish.

Long and precise, with lingering citrus and a chalky mineral grip that keeps the palate energized.
