Nose
A vivid rush of freshly crushed sugarcane stalks and green olive brine, layered with white pepper, warm sun-baked grass, and a saline sea-spray edge. Beneath the intensity sit softer notes of ripe banana skin, lime zest, and crushed fennel seed.
Palate
Explosive yet controlled — grassy cane juice arrives first, then coats the tongue with candied lemon peel, cracked black pepper, and a mineral, almost volcanic salinity. Mid-palate reveals unripe pineapple, sugarcane wax, and a faint anise sweetness that keeps the high proof from feeling austere.
Finish
Long, warming, and herbaceous, with lingering white pepper, lime pith, and the vegetal echo of cane fields at midday. A drop of water opens a second wave of tropical fruit and cocoa nib.

Midday Ember — 1 oz L'Esprit de Neisson, 0.75 oz fresh lime juice, 0.5 oz cane syrup, 3 dashes Angostura bitters, 2 basil leaves. Muddle basil gently, add remaining ingredients, shake with ice, double-strain into a coupe. Garnish with a lime wheel.
