Chalong Bay Sherry Cask Finish Rum
Chalong Bay · Chalong Bay Distillery
A quietly virtuosic rum that proves terroir-driven cane spirit is thriving well beyond the Caribbean. The sherry finish is deft rather than dominant, letting Phuket's fresh cane character sing.
Nose
Fresh-cut sugarcane and green herbs lift first, followed by a wave of dried apricot, walnut skin, and a whisper of oloroso oxidative nuttiness. Underneath sits candied ginger and a faint saline minerality reminiscent of sea breeze.
Palate
Bright and lively — grassy cane sweetness meets sherry-driven raisin and toasted almond. Mid-palate turns waxy and floral with orange peel, honeycomb, and a gentle prickle of white pepper. The oxidative sherry influence adds savory depth without smothering the vibrant cane spirit.
Finish
Medium-long, dry, and clean. Lingering notes of hazelnut, cane fiber, and a subtle salinity. The finish hums like a bassline — steady, understated, and rhythmic.

Cocktail Suggestion
Andaman Groove — 2 oz Chalong Bay Sherry Cask Finish Rum, 0.75 oz fresh lime juice, 0.5 oz honey syrup (2:1), 3 dashes orange bitters, 1 barspoon oloroso sherry. Shake with ice, strain into a chilled coupe, express an orange peel over the surface and drop it in.
Food Pairing
Grilled prawns with tamarind glaze, or aged Manchego drizzled with wildflower honey and toasted almonds.
Founded in 2012 on Phuket's southern coast by a small team committed to single-origin Thai sugarcane and small-batch pot distillation, Chalong Bay ferments and distills fresh-pressed cane juice within hours of harvest — a rare feat outside the French Antilles.

Chalong Bay Double Barrel Aged Rum
Chalong Bay
A quietly compelling rum that rewrites expectations of where fine cane spirits can come from. It sits between French Caribbean agricole and softer aged sipping rums, and does so with genuine identity.

Chalong Bay Pure Series Original
Chalong Bay
A quietly confident white rum that trades the funk of Caribbean pot stills for a serene, aromatic clarity — an ideal introduction to non-Antillean cane-juice distillation and a versatile cocktail base with genuine terroir.

Doorly's 14 Year Old Barbados Rum
Doorly's
Doorly's 14 Year Old is one of the finest arguments for patient tropical aging in carefully selected casks. Where wood meets spirit, this rum has found a near-perfect equilibrium — the barrel's inner skin has contributed layers of complexity without overwhelming the Barbadian molasses-based distillate. At its price point, it remains one of the great values in aged spirits, delivering the kind of oak-driven sophistication that many bottles at three times the cost aspire to. A masterclass in wood management from R.L. Seale and the Foursquare Distillery.

Centenario Fundación 25 Year Old Gran Reserva
Ron Centenario
If this issue's theme is heat shaped by time, Centenario 25 is the thesis statement in liquid form. Twenty-five years of solera aging in Costa Rica's tropical climate compress decades of wood interaction into a rum of startling depth and composure. Where the Glenfarclas 105 delivers furnace-like intensity and the San Matías Extra Añejo shows agave transformed by patient oak, this rum demonstrates how relentless equatorial warmth can forge something almost impossibly smooth yet layered. A masterclass in tropical patience.

Clarendon 10 Year Old Jamaica Rum
Rum Bar by Worthy Park
This issue's theme — Material Shapes Memory — finds its purest expression here. Clarendon's copper pot stills, some of the oldest continuously operating in the Caribbean, literally shape the spirit molecule by molecule, while a decade in Jamaican tropical warehouses (clay floors, wooden walls, humid air) imprints the rum with a sense of place no other maturation environment can replicate. The result is a rum where the materials of its making — copper, clay, wood, cane — are not just tools but co-authors. At $55, it's an extraordinary window into how physical substance becomes liquid memory.

Privateer True American Rum
Privateer
Privateer True American Rum is the embodiment of this issue's theme: essence before ornament. Made entirely on-site in Massachusetts from blackstrap molasses, pot-distilled and aged in new American oak, it refuses every shortcut — no added sugar, no coloring, no glycerol. What emerges is a rum of startling clarity of purpose, built on honest craft and raw material integrity. It proves that rum doesn't need a tropical origin story or dosing to be compelling. It just needs conviction.
