Nose
A striking opening of wet slate and struck flint gives way to warm brioche, orchard fruit skins, and honeyed malt. Beneath, there's smouldering hearth-smoke — not peaty, but almost mineral — with hints of dried fig, cracked black pepper, and beeswax.
Palate
Full and oily on entry, delivering baked apple, dark honey, and toasted almond, followed by a wave of clove, stewed plum, and old leather. A saline, stony core threads through the mid-palate, giving lift and tension against the sweeter sherried notes. Cask strength but remarkably composed.
Finish
Long and warming, with lingering dried fig, dark cocoa, cracked walnut, and a faint whisper of woodsmoke. A dry, mineral echo carries the last notes into a resinous, softly spiced fade.

Food Pairing
Slow-braised lamb shoulder with rosemary, roasted root vegetables, and a smear of dark honey — or aged Coolea cheese with fig jam and toasted walnut bread.
Founded in 2019 by Brendan Carty in the shadow of the Mourne Mountains, Killowen is Ireland's smallest licensed distillery, one of the very few still using direct-fired copper pot stills — a method abandoned elsewhere for its inefficiency but prized here for the depth and character only naked flame can coax from the wash.
