J.J. Corry 'The Flintlock' Batch No. 1 Irish Whiskey
J.J. Corry · Undisclosed (sourced, bonded and matured by Chapel Gate Whiskey Co., County Clare)
J.J. Corry's debut bottling is Irish whiskey that proudly wears its rough edges—earthy grain character and assertive oak tannins push through the sweetness, revealing a complexity born of honesty rather than polish. It's a compelling ambassador for Ireland's independent bonding tradition and a whiskey that rewards those who appreciate texture over smoothness.
Nose
Opens with assertive grain husk and raw barley malt, followed by a wave of toasted oak and beeswax. Underneath there's a whiff of dried apricot, fresh-cut hay, and a faint mineral flintiness that hints at the rougher, unpolished character within.
Palate
The mouthfeel is oily and robust, delivering cracked black pepper, charred wood, and bitter dark chocolate alongside orchard fruit and caramel sweetness. A distinctive cereal graininess persists throughout, giving a farmyard earthiness that refuses to be smoothed away by the honeyed mid-palate.
Finish
Medium-long with lingering oak tannins, dried herbs, and a peppery warmth that fades into toasted malt and a whisper of smoke.

The Clare Highball — 2 oz J.J. Corry The Flintlock · 4 oz chilled sparkling water · 1 barspoon raw honey syrup · 2 dashes Angostura bitters · Build over ice in a tall glass, stir gently, garnish with a lemon twist
Food Pairing
The smoky, oily richness of trout rillettes echoes the whiskey's grainy earthiness, while brown soda bread's malty crumb and crunchy crust mirror the toasted cereal notes; a slick of salted butter and a squeeze of lemon lift the pairing, cutting through the whiskey's oak tannins.
Louise McGuane revived the lost Irish tradition of whiskey bonding in a farmstead on the Loop Head peninsula in County Clare, sourcing and maturing casks with a vintner's sensibility to create J.J. Corry—named after a 19th-century local whiskey bonder whose trade had vanished for over a century.

Keeper's Heart
Keeper's Heart Cask Strength is a fascinating study in how air and atmosphere shape whiskey — Irish pot still softness meets American bourbon boldness at full power, and the marriage breathes new character into both traditions. The higher proof rewards a splash of water, which opens up delicate floral and fruity notes hidden beneath the oak. A compelling conversation-starter that earns its place alongside more established names.
