Gin FEW Barrel Gin
Paul Hletko founded FEW Spirits in 2011 in Evanston, Illinois—a town so historically dry that Prohibition-era temperance crusader Frances Elizabeth Willard (whose initials gave the distillery its cheeky name) once called it home. Hletko, a patent attorney turned distiller, was already making acclaimed whiskeys when he turned his attention to aging gin in the same new charred American oak barrels used for his bourbon. The idea was radical in its simplicity: if char could unlock vanillin and caramel from oak for whiskey, what might it do when juniper, coriander, and citrus peel were invited to the same party? The answer was a gin that bridged two worlds, proving that the same alchemical fire that defines great bourbon could reshape a botanical spirit without erasing its essential gin-ness. Each batch rests in barrel just long enough to absorb the char's influence while preserving bright juniper clarity—a calibration of fire and time that rewards patience and precision in equal measure.
