Cascahuín Plata 48

Cascahuín · Destilería Cascahuín (Rosales family)

96 proofNAS (Unaged)El Arenal, Jalisco, Mexico (Valles/Lowlands)
One of the most transparent expressions of lowland terroir on the market — Cascahuín Plata 48 strips away every softening influence and lets the agave, the soil, and the still speak plainly. Essential for any serious blanco flight.

Tasting Notes

Nose

A vivid burst of cooked agave fiber leads, layered with wet river stone, crushed black pepper, and bright lime zest. Underneath, subtle notes of green olive brine, damp earth, and a whisper of eucalyptus signal the untamed volcanic soil of El Arenal.

Palate

Full-bodied and oily, with an assertive rush of roasted agave, white pepper, and grapefruit pith. Mid-palate reveals mineral salinity, fresh-cut grass, and a touch of anise, all buoyed by the higher proof without ever burning. There's a raw, almost saline vegetality that speaks directly of the soil.

Finish

Long and structured, drying with lingering pepper, citrus oil, and a chalky mineral echo. The extra ABV gives it grip and clarity that lower-proof blancos simply can't match.

Cocktail Suggestion

The Arenal Highball — 1.5 oz Cascahuín Plata 48, 0.5 oz fresh lime juice, 0.25 oz agave syrup, top with chilled mineral water (4 oz). Build in a tall glass over a single large ice spear, gently stir, garnish with a grapefruit peel expressed and dropped in.

Food Pairing

Grilled octopus with smoked paprika, lemon, and Castelvetrano olives — the tequila's salinity and pepper mirror the char while its citrus lifts the richness.

The Story

Fourth-generation distiller Salvador Rosales Trejo crafts Cascahuín at NOM 1123 in El Arenal, where mature Valles agaves are cooked in masonry ovens, milled traditionally, and fermented with native yeasts — a rare unbroken thread of family tequila-making stretching back to 1904.

Código 1530

Código 1530 Añejo is a masterclass in what happens when spirit and stave become intimate. The use of Cabernet-seasoned French White Oak—rather than the more common American oak ex-bourbon barrels—creates a distinctive bridge between the agave world and the wine world, making it a perfect fit for the 'Barrel's Inner Skin' theme. The wine-stained wood imparts a refined tannic structure and fruit-forward complexity that complement rather than overwhelm the cooked agave heart. This is contemplative, after-dinner tequila that rewards patience.

Tequila San Matías Gran Reserva Extra Añejo

San Matías

Casa San Matías has been making tequila since 1886, and this extra añejo demonstrates a mastery of time and barrel. Three years in American oak have deepened the spirit without erasing its agave identity—a furnace of patience made liquid. At under $90, it punches well above its price class, delivering the contemplative depth of bottles twice its cost. A superb after-dinner pour for those who believe great tequila rewards the same reverence as aged whisky.

Fortaleza

Fortaleza's Winter Blend series marries reposado lots of varying age into a seasonal expression that highlights the interplay between agave and oak. The tahona-crushed agave gives it a textural richness that roller-milled tequilas rarely achieve. This is tequila where craft and material are inseparable.

Siembra Azul

A quietly excellent Añejo that resists the modern impulse toward heavy oak and sweetness — David Suro's Siembra Azul remains a benchmark for honest, agave-first tequila at a fair price.
