Rhum J.M Millésime 2012
Rhum J.M · Distillerie J.M
J.M's vintage releases demonstrate what happens when exceptional cane juice meets patient maturation in Martinique's volcanic humidity. This 2012 has shed the youthful fire of young agricole without losing its identity. The shadow work here is the decade of tropical aging that concentrates flavors no temperate warehouse could produce.
Nose
Cane-forward agricole character is immediately apparent, layered with dried tropical fruits and a rich chocolate note. Beneath that, oak and a subtle tobacco leaf emerge, with a citrus brightness — orange zest — keeping the darker elements in check.
Palate
Full-bodied and complex. The agricole grassiness has mellowed into something more rounded — muscovado sugar and vanilla interplay beautifully. Mid-palate reveals leather and roasted coffee, with tropical fruit persisting as a sweet undercurrent throughout.
Finish
Long and contemplative, with oak tannins, dried fruit, and a final flicker of orange peel. The agricole terroir lingers beneath everything.
- Base Ingredient

- Distillation

Food Pairing
The rum's chocolate and orange peel notes mirror the tart's flavors directly, while the agricole character and oak tannins cut through the richness of the ganache. The sea salt heightens everything.
Nestled at the foot of Mont Pelée on Martinique's north coast, Distillerie J.M grows its own sugarcane on volcanic slopes where elevation and microclimate produce some of the island's most distinctive rhum agricole.

Jura 10 Year Old Single Malt Scotch Whisky
Jura
Jura 10 is an island malt that sidesteps the peat-bomb stereotype entirely. Its restraint is its strength — a whisky shaped by geography rather than process, tasting of the rain and wind that batter its remote island home. Ideal as a gateway to island Scotch.

Noah's Mill Kentucky Bourbon Whiskey
Noah's Mill
Noah's Mill is barrel-proof bourbon without apology. Its intensity rewards patience — a splash of water opens the caramel and softens the leather into something rich and contemplative. A serious sipper for those who want their bourbon to push back.

Crossbill Highland Dry Gin
Crossbill
Crossbill is a gin that refuses to compromise on juniper. Using only Scottish juniper berries and rosehip, it delivers one of the most juniper-forward profiles available — a gin built for G&T purists and Martini devotees who want the pine to sing. It tastes like the Scottish Highlands in a glass.

Rhum Clément Select Barrel Rhum Agricole
Clément
Clément Select Barrel is an excellent entry point into aged agricole rhum. The barrel aging tames the raw grassy intensity without erasing it, creating a spirit that bridges the gap between agricole purists and aged rum lovers. At its price, it's one of the best values in the category.

Clairin Communal Sajous Ansyen 49 Mois
Clairin
Michel Sajous grows his own sugarcane — a rare practice even among clairin producers — and this 49-month aged expression shows how Haitian rum transforms with time in barrel. The wild, untamed character of clairin remains, but the oak provides architecture. This is terroir-driven rum at its most expressive.

Novo Fogo Two Years Barrel-Aged Cachaça
Novo Fogo
A benchmark for accessible aged cachaça: bright enough for a Caipirinha upgrade, structured enough for neat sipping. It rewards drinkers curious about how minimal oak influence can sharpen rather than mask a cane spirit's identity.

Foursquare Exceptional Cask Selection Mark XXIV 'Equipoise'
Foursquare
Richard Seale continues to set the standard for unadulterated Barbadian rum with this release. Equipoise earns its name — it's 60% ABV but drinks with a composure that belies the proof. The interplay of pot and column still distillates gives it both weight and elegance. A serious rum for serious drinkers.
