Nose

Wild strawberry, cranberry skin, dried rose petal, a whisper of forest floor and crushed stone, with a saline lift.

Palate

Weightless yet insistent — tart red currant, pomegranate, sour cherry pit, and a chalky, almost bitter herbal edge. Ethereal acidity carries the fruit across the palate without ever settling into weight.

Finish

Dry, mineral, and quietly persistent — leaves the impression of what isn't there: no oak, no extraction, no cosmetic fruit. Just tension and air.

Cocktail Suggestion

The Uncarved Block — This wine is not for cocktailing — serve it lightly chilled (55°F) in a Burgundy glass. If you must: 4 oz Poulsard, a barspoon of Suze, and a twist of grapefruit peel, stirred briefly over one large cube.

Roast chicken with tarragon, trout amandine, Comté-topped gougères, or a plate of charcuterie and cornichons.

The Story

Founded in 1991 by Évelyne and Pascal Clairet on the outskirts of Arbois, Domaine de la Tournelle farms organically and vinifies without additions, coaxing from the indigenous Poulsard grape a wine so translucent it seems more suggestion than substance.
