Nose

Unlike bourbon or sherry oak, this virgin Irish wood had never held spirit before — every molecule of flavor had to be coaxed out through careful finishing, typically just twelve to eighteen months, because timing with reactive virgin oak is everything. Go too long and the tannins overwhelm; too short and the terroir never speaks. Master Blender Billy Leighton pulled each cask at its individual peak, and the resulting vatting is a portrait of convergence — decades of patient distillate meeting centuries of patient growth, captured at the precise edge of ripeness.
