Connemara Original Peated Single Malt Irish Whiskey

Connemara · Cooley Distillery

$3580 proofNASCounty Louth, Ireland
Connemara stands alone in Irish whiskey as the category's most committed expression of peat-driven minerality. Where Scottish peated malts can overwhelm, Connemara uses a lighter hand, letting the terroir speak—wet rock, coastal brine, and chalky earth—rather than burying it under campfire smoke. At its modest price, it's one of the most honest mineral-forward whiskeys on any shelf, perfectly at home in an issue celebrating the temper of stone.

Tasting Notes

Nose

An opening salvo of cool peat smoke lifts off wet granite, followed by briny sea air, lemon peel, and a dusting of crusite chalk. There's a fleeting herbal note—wild thyme—that gives the impression of rain-slicked moorland, while beneath it all lies a faint honeyed sweetness anchoring the mineral drift.

Palate

Light-bodied but texturally compelling, the entry is all flint and damp earth, with peat smoke rolling across the tongue like fog through a river valley. Midpalate reveals green apple, barley sugar, and a surprising chalky minerality—almost like licking a limestone wall. Touches of vanilla and mild black pepper emerge as the whiskey opens up.

Finish

Medium length, dry and pleasantly ashy, with lingering wet stone, iodine, and a final wisp of heather smoke that dissolves into a clean, almost saline farewell.

Cocktail Suggestion

The Burren Mist — 2 oz Connemara Peated Single Malt Irish Whiskey | 0.75 oz fresh lemon juice | 0.5 oz honey syrup (2:1 honey to water) | 2 dashes saline solution (4:1 water to salt) | 1 sprig fresh thyme. Combine whiskey, lemon juice, honey syrup, and saline in a shaker with ice. Shake vigorously for 12 seconds. Double-strain into a chilled coupe. Gently slap the thyme sprig between your palms to release its oils and lay it across the surface. The drink balances Connemara's smoky minerality against bright citrus and floral honey, with the saline amplifying the whiskey's stony character.

Food Pairing

Hot-smoked Irish trout layered over dense, nutty brown soda bread and topped with bright, briny pickled samphire creates a pairing that mirrors Connemara's own tensions. The trout's gentle smoke echoes the whiskey's peat, while the bread's earthy wholemeal character amplifies its malt backbone. Pickled samphire brings a salty, mineral crunch that locks into the whiskey's chalky, coastal finish, and a squeeze of lemon ties everything together with a citric brightness that lifts both plate and glass.

The Story

When John Teeling resurrected whiskey production at the Cooley Distillery in the late 1980s, Irish whiskey orthodoxy held that peat had no place in the island's tradition. Teeling disagreed. He looked to Connemara—that wild, rain-lashed stretch of western Ireland where bogland runs to the sea and the bedrock is ancient quartzite—and created a peated single malt that honored a forgotten chapter of Irish distilling. The name itself is an invocation of landscape: a place where stone, water, and peat are inseparable. Cooley's peat is sourced from Irish bogs, giving the whiskey a character distinct from Scottish peat—lighter, more herbaceous, with a pronounced mineral edge that recalls the limestone and granite geology underlying much of Ireland. In an industry that spent decades chasing smooth approachability, Connemara remains a proud outlier, a whiskey that tastes like the land it comes from.
