Jefferson's Ocean Aged at Sea Voyage 30
Jefferson's · Sourced and bottled b y Jefferson's (Castle & Key/undisclosed Kentucky distilleries)
A bourbon transformed by motion — the constant pitch and pressure of the open ocean accelerates barrel interaction in ways no rickhouse can replicate, yielding a whiskey that is darker, brinier, and more deeply oaked than its years on land would suggest.
Nose
Caramelized brown sugar meets a faint whisper of sea spray, followed by toasted oak, dark cherry, and a saline-tinged vanilla cream.
Palate
Rich and viscous with layers of burnt caramel, charred oak, dark chocolate, and a distinctive briny edge that lifts the sweetness; rye spice pulses underneath alongside notes of tobacco leaf and roasted pecan.
Finish
Long and warming, with lingering brine, dark cocoa, oak tannin, and a final flicker of maple and leather.

Cocktail Suggestion
The Mariner's Old Fashioned — 2 oz Jefferson's Ocean Voyage 30, 1 barspoon demerara syrup, 2 dashes Angostura bitters, 1 dash orange bitters, a tiny pinch of flaky sea salt. Stir over a large ice cube and express an orange peel over the top before dropping it in.
Food Pairing
Cedar-plank grilled salmon with a brown sugar and black pepper glaze, or a wedge of aged gouda with dark chocolate.
Conceived by Trey Zoeller after a chance experiment with barrels aboard a research vessel, each voyage of Jefferson's Ocean sends fully matured bourbon to sea for months, crossing multiple equators and dozens of ports so that wave motion, humidity, and pressure changes physically force the spirit in and out of the charred staves.

Jura 10 Year Old Single Malt Scotch Whisky
Jura
Jura 10 is an island malt that sidesteps the peat-bomb stereotype entirely. Its restraint is its strength — a whisky shaped by geography rather than process, tasting of the rain and wind that batter its remote island home. Ideal as a gateway to island Scotch.

Crossbill Highland Dry Gin

Rhum Clément Select Barrel Rhum Agricole
Clément
Clément Select Barrel is an excellent entry point into aged agricole rhum. The barrel aging tames the raw grassy intensity without erasing it, creating a spirit that bridges the gap between agricole purists and aged rum lovers. At its price, it's one of the best values in the category.

New Riff Balboa Rye Bourbon
New Riff
A bourbon that earns its complexity through friction rather than finesse — the rare high-rye bourbon that tastes engineered for tension, then rewards patience with genuine grace.
