Terlan Sauvignon Blanc Winkl 2023
Cantina Terlan (Terlano)
Cantina Terlan is the benchmark cooperative of Alto Adige, and the Winkl is their site-specific Sauvignon Blanc from a single south-facing vineyard at 300 meters. Cool alpine air and the warm Ora wind from Lake Garda create the diurnal temperature swings that give this wine its aromatic precision. It demonstrates that Sauvignon Blanc can be complex without needing to shout.
Nose
Green grass and gooseberry open the nose, joined by citrus — lemon and grapefruit — and a subtle floral note. There is a flinty, mineral quality underneath that distinguishes it from warmer-climate Sauvignon Blancs.
Palate
Crisp and focused, with green apple acidity driving the entry. The mid-palate delivers gooseberry and melon alongside a gentle herbal character. The minerality from the porphyry soils of the Winkl vineyard adds a saline edge that extends the palate beautifully.
Finish
Clean and persistent, with citrus, green apple, and a subtle chalky mineral note.

Food Pairing
The wine's green, herbal notes and crisp acidity mirror the asparagus while cutting through the richness of the risotto and aged cheese.
Produced by the 130-year-old Cantina Terlan cooperative in Italy's Alto Adige, from the Winkl vineyard planted in porphyry soils at the base of the Dolomites where alpine breezes maintain aromatic intensity in the grapes.

Domaine Trimbach Riesling Alsace 2022
Trimbach
Trimbach's entry-level Riesling is anything but basic. The 2022 vintage delivers the house hallmarks — razor-sharp acidity, bone-dry precision, and a mineral backbone that speaks of Alsatian limestone — at a price that makes it one of the smartest values in white wine.

Domaine Huet Vouvray Le Haut-Lieu Moelleux 2023
Domaine Huet
Domaine Huet's Le Haut-Lieu Moelleux is an exercise in controlled sweetness — the heat of the 2023 vintage concentrated sugars that the biodynamic estate's limestone soils kept in perfect tension with acidity. It is a wine that tempers richness with structure, proof that fire from above (sun) and below (mineral-rich stone) can collaborate to extraordinary effect.

Domaine des Roches Neuves Saumur Blanc Terres Chaudes 2023
Domaine des Roches Neuves
Thierry Germain's biodynamically farmed Chenin Blanc from the Terres Chaudes parcel delivers a wine where the tuffeau limestone substrate is as much a character as the grape. Wood plays virtually no role here — the expression is all terroir, acid, and fruit. A white wine for those who believe restraint is its own form of generosity.

Donnafugata Ben Ryé Passito di Pantelleria DOC 2022
Donnafugata
Ben Ryé is Italy's most celebrated passito, made from Zibibbo grapes sun-dried on the wind-blasted volcanic island of Pantelleria. The heat of the African-influenced climate concentrates sugars, but Donnafugata's meticulous winemaking preserves acidity and freshness. A dessert wine that transcends the category.
