Volcán X.A
Volcán De Mi Tierra · Volcán De Mi Tierra (NOM 1523)
Volcán X.A is a masterclass in how terroir — literally shaped by geological upheaval — can translate through a spirit. The volcanic soils at the base of the Tequila volcano produce agave with a distinctive mineral intensity that no amount of barrel aging can fabricate. This extra añejo honors that provenance by balancing rich oak-driven sweetness with an unmistakable sense of place. In an issue devoted to climate shaping what's in the glass, few bottles make the argument as eloquently as one named after the volcano that created its terroir.
Nose
Opens with intense cooked agave sweetened by long maturation, layered with dried fig, toasted almond, and dark chocolate. A whisper of volcanic mineral soil — the signature of agave grown in the nutrient-rich, porous terrain flanking the dormant Volcán de Tequila — threads beneath butterscotch and cigar-box cedar. Warm baking spices emerge slowly: cinnamon bark, clove, and a faint floral-herbal lift that recalls the altitude shifts between lowland and highland fields.
Palate
Luxuriously viscous on entry with caramel and vanilla custard giving way to roasted agave heart, dark cacao nib, and espresso. Mid-palate introduces dried tropical fruit — papaya and mango — alongside black pepper and a compelling saline-mineral note that speaks directly to the volcanic soils where the agave was cultivated. Oak influence is confident but measured, contributing toasted coconut and a touch of leather without overwhelming the vegetal soul of the spirit.
Finish
Exceptionally long and warming. Dark chocolate and espresso linger alongside smoked agave and a subtle dried-herb bitterness. The volcanic minerality resurfaces at the very end, joined by sweet tobacco and a final whisper of cinnamon, leaving a dry, sophisticated impression that rewards patient sipping.

Food Pairing
The complex, slow-built spice and chocolate of an authentic Oaxacan mole negro mirrors the X.A's dark cacao, cinnamon, and roasted-agave depth. Braised duck leg provides rich, unctuous protein whose rendered fat softens the tequila's tannins, while the mole's dried chili heat ignites the spirit's black-pepper and mineral notes. A scattering of toasted sesame seeds adds nuttiness that echoes the almond and coffee tones in the finish. Together, the pairing celebrates the way heat, earth, and patience — in both kitchen and distillery — produce layers of flavor that neither element could achieve alone.
The Volcán de Tequila is a dormant stratovolcano whose ancient eruptions blanketed the surrounding valley with mineral-rich basaltic soil — porous, well-draining, and teeming with the trace elements that blue Weber agave absorbs over its seven-to-ten-year growing cycle. Volcán De Mi Tierra was conceived as a tribute to this geological inheritance. Launched by Moët Hennessy in partnership with master distiller Ana María Romero Mena, the brand sources agave from both lowland plots near the volcano's base and select highland parcels, blending the two terroirs to capture the full spectrum of Jalisco's agave expression. The X.A expression pushes this philosophy to its zenith: a blend of extra añejo tequilas aged in a combination of French and American oak casks, marrying the richer, earthier character of lowland agave with the brighter fruit notes of highland plants. The result is a spirit where climate, altitude, and ancient volcanic geology converge in a single glass — a liquid argument that tequila possesses terroir every bit as compelling as the world's great wine appellations.

Tapatio Reposado 110
Tapatío
This is reposado with its volume turned up. The 110-proof bottling lets the agave and barrel talk at full register without distortion. Don Carlos Camarena's La Alteña distillery produces this with traditional brick ovens and tahona-crushed agave, and the result is a reposado that hides nothing. Sip it neat or try it in a stirred cocktail where you want agave to lead.

Código 1530 Añejo
Código 1530
Código 1530 Añejo is a masterclass in what happens when spirit and stave become intimate. The use of Cabernet-seasoned French White Oak—rather than the more common American oak ex-bourbon barrels—creates a distinctive bridge between the agave world and the wine world, making it a perfect fit for the 'Barrel's Inner Skin' theme. The wine-stained wood imparts a refined tannic structure and fruit-forward complexity that complement rather than overwhelm the cooked agave heart. This is contemplative, after-dinner tequila that rewards patience.

Tequila San Matías Gran Reserva Extra Añejo
San Matías
Casa San Matías has been making tequila since 1886, and this extra añejo demonstrates a mastery of time and barrel. Three years in American oak have deepened the spirit without erasing its agave identity—a furnace of patience made liquid. At under $90, it punches well above its price class, delivering the contemplative depth of bottles twice its cost. A superb after-dinner pour for those who believe great tequila rewards the same reverence as aged whisky.

Fortaleza Reposado Winter Blend 2024
Fortaleza
Fortaleza's Winter Blend series marries reposado lots of varying age into a seasonal expression that highlights the interplay between agave and oak. The tahona-crushed agave gives it a textural richness that roller-milled tequilas rarely achieve. This is tequila where craft and material are inseparable.
