El Pandillo Reposado

El Pandillo · Destilería El Pandillo

80 proof6 monthsJesús María, Los Altos, Jalisco, Mexico
A textbook Los Altos reposado from one of the region's most idiosyncratic distillers — agave-forward, exquisitely balanced, and priced fairly for the craft on display.

Tasting Notes

Nose

Fresh cooked agave leads the way, layered with lemon zest, wet stone, and a whisper of vanilla and toasted oak. A soft floral lift — chamomile and orange blossom — rounds out the aromatics.

Palate

Bright and clean on entry, with sweet cooked agave, honeyed citrus, and green pepper. Mid-palate develops light caramel, cinnamon, and a mineral thread, with the oak sitting in gentle support rather than dominance.

Finish

Medium-length, warm and dry, with lingering agave sweetness, cracked pepper, and a chalky mineral echo.

Cocktail Suggestion

Alba de Jesús María — 2 oz El Pandillo Reposado, 0.75 oz fresh grapefruit juice, 0.5 oz fresh lime juice, 0.5 oz honey syrup (2:1 honey to warm water), 2 dashes orange bitters. Shake with ice, strain into a chilled coupe, and garnish with a grapefruit peel expressed over the surface.

Food Pairing

Grilled shrimp tacos with charred pineapple salsa and a squeeze of lime — the reposado's citrus and cooked agave amplify the smoky sweetness of the fruit.

The Story

Built almost entirely from salvaged and hand-fabricated equipment by third-generation tequilero Felipe Camarena — including the famed 'Frankenstein' roller mill — El Pandillo distills its spirits from spring water drawn from an on-site well and rain harvested from the distillery's own roof.
