Nose

Fresh cooked agave leads the way, layered with lemon zest, wet stone, and a whisper of vanilla and toasted oak. A soft floral lift — chamomile and orange blossom — rounds out the aromatics.

Palate

Bright and clean on entry, with sweet cooked agave, honeyed citrus, and green pepper. Mid-palate develops light caramel, cinnamon, and a mineral thread, with the oak sitting in gentle support rather than dominance.

Finish

Medium-length, warm and dry, with lingering agave sweetness, cracked pepper, and a chalky mineral echo.

The Story

Built almost entirely from salvaged and hand-fabricated equipment by third-generation tequilero Felipe Camarena — including the famed 'Frankenstein' roller mill — El Pandillo distills its spirits from spring water drawn from an on-site well and rain harvested from the distillery's own roof.
