Nose

Bright, briny, and grassy — crushed sugarcane stalk meets sea spray, with high-toned notes of green olive, white pepper, and a flinty, almost mineral edge that hints at volcanic terroir.

Palate

Lean and oily at once: pressed cane sap, unripe banana, lime pith, and a peppery warmth that builds across the tongue. Underneath runs a savory, almost saline thread reminiscent of olive brine and wet basalt.

Finish

Medium-long, dry, and herbaceous, fading on green cane, anise, and a faint smokiness — like embers under wet stone.

The Story

Distilled on the mountainous island of Santo Antão, where smallholder farmers press cane by ox-driven trapiche and ferment in open vats before running it through wood-fired pot stills — a tradition shaped by centuries of isolation and the volcanic soils that feed the cane.
