A benchmark unaged agricole that showcases the tension between raw agricultural power and Italian-style precision — Luca Gargano and Gianni Capovilla's collaboration remains one of the most articulate white rums on Earth.

Tasting Notes

Nose

A taut, high-tension bouquet — freshly crushed sugarcane and green olive brine lead, followed by white pepper, cucumber skin, damp limestone, and a lift of lime zest. Underneath, a subtle floral thread of jasmine and sugar snap pea.

Palate

Muscular yet precise. Grassy cane juice arrives with saline weight, then unfurls into green mango, fennel frond, unripe pear, and a bright chlorophyll rush. The 56% ABV is coiled rather than aggressive, holding oily texture and vegetal minerality in perfect suspension.

Finish

Long, saline, and mineral — sugarcane pulp, wet stone, and a whisper of anise linger with slow-release warmth. Dry, structured, and almost briny at the very end.

Serve & Pair

Cocktail Suggestion

Held Breath Ti' Punch — 2 oz Rhum Rhum PMG Blanc, 1 barspoon fresh cane syrup (sirop de canne), 1 thick disc of lime pressed lightly to express oil. Combine in a rocks glass, stir gently three times, no ice. Serve as chacun prépare sa propre mort — each drinker adjusts to taste.

Food Pairing

Grilled octopus with lemon, olive oil, and Espelette pepper; or raw oysters with a mignonette of green apple and shallot.

The Story

Born from the improbable partnership of Velier's Luca Gargano and legendary Italian grappa distiller Gianni Capovilla, Rhum Rhum is distilled in bespoke copper pot stills on Marie-Galante using only cane juice from Bielle's estate — a rhum agricole made with the meticulous slow-distillation ethos of a Friulian eau-de-vie.

Dictador 20 Year Old Solera System Rum

Dictador

Dictador 20 is dusk in a glass—opaque, unhurried, and deeply layered. Its Colombian solera aging delivers an almost dessert-like richness without cloying sweetness, making it a meditative sipper that rewards patience. When evening sharpens the senses, this rum answers with quiet authority.

Holmes Cay Fiji 2004 Single Cask Rum

Holmes Cay

Holmes Cay's Fiji 2004 is a masterclass in how heat — both the tropical Fijian climate and cask-strength intensity — forges depth and complexity. Sixteen years of equatorial aging have compressed decades of flavor development into a rum that burns bright but never out of control. The flame that tempers, indeed: every searing note is answered by sweetness and structure.

Doorly's 14 Year Old Barbados Rum

Doorly's

Doorly's 14 Year Old is one of the finest arguments for patient tropical aging in carefully selected casks. Where wood meets spirit, this rum has found a near-perfect equilibrium — the barrel's inner skin has contributed layers of complexity without overwhelming the Barbadian molasses-based distillate. At its price point, it remains one of the great values in aged spirits, delivering the kind of oak-driven sophistication that many bottles at three times the cost aspire to. A masterclass in wood management from R.L. Seale and the Foursquare Distillery.

Centenario Fundación 25 Year Old Gran Reserva

Ron Centenario

If this issue's theme is heat shaped by time, Centenario 25 is the thesis statement in liquid form. Twenty-five years of solera aging in Costa Rica's tropical climate compress decades of wood interaction into a rum of startling depth and composure. Where the Glenfarclas 105 delivers furnace-like intensity and the San Matías Extra Añejo shows agave transformed by patient oak, this rum demonstrates how relentless equatorial warmth can forge something almost impossibly smooth yet layered. A masterclass in tropical patience.
