Richard Seale's Exceptional Cask Selection bottlings are the gold standard for aged Barbadian rum, and Empery — aged in bourbon and then Madeira casks — demonstrates how sequential cask maturation can create layers without muddying the spirit. Fourteen years in wood have produced something that rivals the best aged spirits in any category.

Tasting Notes

Nose

Immediate toffee and dark chocolate give way to orange peel and dried fruit. There is a cedar-like oak presence and a vanilla sweetness that suggests well-managed bourbon cask influence. Beneath it all sits a molasses-rich core that anchors everything.

Palate

Full-bodied and commanding at cask strength. The oak influence is deeply integrated — toasted coconut and vanilla from the bourbon barrels, dried fruit and sherry-like richness from the ex-sherry casks. Leather and tobacco develop through the mid-palate, while a roasted coffee note adds bittersweet balance.

Finish

Exceptionally long. Toffee and dried fruit linger, with oak spice and a whisper of leather trailing off slowly. No harsh edges despite the proof.

The Story

Master distiller Richard Seale crafted Empery at the family's Foursquare Distillery in St. Philip parish, aging a blend of pot and column still rums in ex-bourbon barrels before finishing in ex-Madeira casks.

Empirical Spirits Helena Gin

Empirical

Empirical's approach — treating spirits like a culinary lab experiment — could easily produce gimmicks. Helena Gin avoids that trap entirely. It is structurally rigorous: juniper-forward enough for purists, texturally inventive enough for modernists. The chamomile integration is the quiet stroke of genius that separates this from dozens of competent Nordic gins.

Caroni 17 Year Old Extra Strong Trinidad Rum

Caroni

Caroni is not for the timid. The distillery closed in 2002, and every remaining bottle is a finite artifact of a heavy, industrial rum-making tradition. This 17-year expression captures the full Caroni paradox: brutally funky yet surprisingly layered. It is a rum that demands your full attention and repays it generously.

Terralta Extra Añejo

Terralta

Terralta's Extra Añejo represents the rare aged tequila that never forgets its source material. Five years in barrel could overwhelm lesser spirits, but the highland agave backbone and additive-free commitment keep it honest. Felipe Camarena's fingerprint is unmistakable: precise without being sterile, complex without being fussy.

Balvenie 17 Year Old DoubleWood

The Balvenie

Where the 14-year Caribbean Cask pushes rum sweetness, this 17-year DoubleWood opts for depth and restraint. The extra three years in refill American oak followed by sherry butts adds a measured gravity that rewards slow sipping. A Speyside benchmark for secondary maturation done right.

Worthy Park Single Estate 2013

Worthy Park

The 2013 vintage distillation captures a specific year of Jamaican sugarcane and fermentation conditions at Worthy Park's Lluidas Vale estate. Aged in the tropics where angel's share is punishing, what remains in the barrel after those hot Jamaican seasons is concentrated and unapologetically flavorful. This is rum for people who want to taste the land and the year.

Ron Diplomático Mantuano

Diplomático

Diplomático's Mantuano is often overshadowed by its Reserva Exclusiva sibling, but it stands on its own as a well-crafted daily sipper. The Venezuelan tropical climate accelerates the angel's share and concentrates flavors. At its price point, it punches well into cocktail territory while remaining pleasant neat.

Barbancourt

Barbancourt 15 occupies a unique position — distilled from sugarcane juice like agricole rhum but aged with the patience of a grand rum house. Fifteen years in Limousin oak give it a brandy-like sophistication rare at this price. Haiti's terroir and resilience are in every sip.
