Clairin Sajous Ansyen 49 Mois Ex-Caroni

Clairin · Distillerie Michel Sajous

This bottling represents a collision of two rum philosophies — Haiti's wild, terroir-driven clairin tradition and Trinidad's extinct Caroni distillery. The ex-Caroni cask lends structure and darkness to Sajous's exuberant distillate, creating a rum that is both challenging and deeply rewarding.

Tasting Notes

Nose

An immediate burst of tropical fruit — overripe banana and guava — gives way to earthy sugarcane funk. Behind that, a distinctive tarry quality from the ex-Caroni cask: burnt rubber, molasses, and a hint of dark chocolate.

Palate

Muscular and layered. The Caroni cask influence adds a smoky, leathery character to Sajous's naturally fruity distillate. Tropical fruits and fresh sugarcane wrestle with roasted coffee and tobacco leaf. The texture is oily and full.

Finish

Long and complex, with lingering tobacco, coffee, and a final note of citrus peel cutting through the richness.

Food Pairing

The pork belly's rendered fat and Scotch bonnet heat meet the rum's tropical funk and smoky Caroni-influenced depth, while allspice in the jerk seasoning bridges the spirit's spice notes.

The Story

Michel Sajous cultivates his own sugarcane in Haiti's Artibonite valley, fermenting with wild yeast and distilling on a small copper pot still — this expression was aged 49 months in casks previously used to mature Trinidad's legendary Caroni rum.
