Domaine du Cros Marcillac Lo Sang del Pais 2021

Domaine du Cros · Domaine du Cros

Marcillac, Aveyron, France
Marcillac is one of France's most obscure appellations, tucked into the steep slopes of a former iron-mining valley in the Aveyron. Domaine du Cros is its benchmark estate, and this cuvée — named 'The Blood of the Land' — delivers exactly that: an uncompromising red shaped entirely by its vertiginous terrain and indigenous grape variety.

Tasting Notes

Nose

Brambly dark berry fruit dominates, with blackcurrant and a distinctive green pepper note that defines the Fer Servadou grape. A leafy, almost vegetal quality sits alongside violet florals and a faint mineral earthiness.

Palate

Medium-bodied with crunchy tannins and bright acidity. Dark cherry and berry fruit are taut and focused, framed by green pepper and a hint of mint. The iron-rich terroir of Marcillac's steep red-soil slopes shows through as a persistent mineral grip.

Finish

Medium length with lingering berry, green pepper, and a chalky, tannic close.

Food Pairing

The wine's tannic grip and mineral acidity cut through the rich, cheesy potato purée of aligot — a traditional Aveyron dish — while its peppery berry fruit complements the char and fat of roasted Toulouse sausage.

The Story

Philippe Teulier farms steep, iron-rich slopes in the remote Aveyron valley of southwest France, where the indigenous Fer Servadou grape — known locally as Mansois — produces deeply colored reds on terraces carved into the hillside.
