The Fingerprint of Fire
Theme: Heat Shapes Identity
From charred barrels to kiln-dried malt to sun-baked agave fields, this issue traces how controlled heat transforms raw ingredient into singular spirit and wine.

Fire is the oldest tool in the maker's kit. Before any spirit touches glass, heat has already done its most consequential work — splitting sugars in a mash tun, caramelizing the inside of a barrel, cracking open the cellular walls of a roasted agave piña. The flavor we taste is, in many ways, the autobiography of a flame.
Today's eight selections each owe a defining character trait to the application of heat. Some wear it boldly — char, smoke, toast. Others carry it as quiet undercurrent, the warmth of a sun-drenched vineyard or the gentle kiss of a copper pot still. Together, they remind us that fire doesn't erase identity; it reveals it.
This issue's aromas trace the fingerprint of fire across categories — from charred oak and toffee in spirits to the toasted, sun-ripened fruit of warm-climate wines. Train your nose to distinguish direct heat effects (char, smoke, roast) from indirect ones (caramelization, concentration, baked fruit).

Gin Bombay Sapphire East London Dry Gin

Classification: London Dry Gin
Brand: Bombay Sapphire East
Distillery: Laverstoke Mill Distillery
Proof: 84 (42% ABV)
Age: NAS
Color: Crystal clear with bright, clean legs
MSRP: $24–$30

Distillation: Vapor infusion (Carterhead still) with 12 botanicals including the original 10 plus Thai lemongrass and Vietnamese black peppercorn
Nose: An immediate wave of white pepper and Thai lemongrass leaps from the glass, layered over the familiar juniper backbone. Warm ginger and black peppercorn add a spiced, almost smoldering quality that distinguishes it from the original expression. Underneath, delicate floral notes of coriander and orris root provide an aromatic counterpoint.
Palate: The entry is bright with lemon zest and lemongrass before a wave of fiery ginger and cracked black pepper builds across the mid-palate. Juniper stays present throughout but yields center stage to the heat-driven botanicals, while subtle licorice and angelica add herbal depth. The texture is silky and medium-bodied, carrying each spice note with precision.
Finish: Medium-long and warming, with lingering ginger heat, white pepper, and a final whisper of juniper resin. The finish slowly fades with a dry, herbaceous echo.
