The Almanac of Ash
Theme: Smoke-Touched Histories
From charred barrels to volcanic soils, this issue traces the mark that fire and heat leave on eight exceptional bottles — each one a record of transformation written in flavor.

Ash is not an ending. It is evidence of process, a residue of decisions made at high temperatures. Whether it appears as the char inside a bourbon barrel, the peat smoke layered into malt, or the volcanic mineral that threads through a wine's backbone, ash tells us something about the forces that shaped the liquid in our glass. This issue reads those marks.
Across eight bottles — from a cask strength bourbon with deep char influence to an Etna white wine rooted in ancient lava fields — we trace the signature that heat, fire, and combustion leave behind. Each product here carries a distinct thermal fingerprint, and together they map the spectrum of what transformation through burning can mean.
Today's aroma training focuses on the aromatic fingerprints of fire and transformation — smoky phenols in Scotch, charred oak in bourbon, roasted notes in rum, and the volcanic minerality that can thread through both wine and agave spirits. These are the scents of heat's residue, each one shaped by a different kind of burning.

Mid-palate reveals roasted corn sweetness intertwined with leather and black pepper, while French oak influence adds a refined tannic structure and subtle vanilla cream. The cask strength proof amplifies every note without overwhelming, creating a rich, almost chewy texture.

Palate: Full-bodied and intensely smoky, yet the white port and Madeira cask influence brings a lush tropical sweetness that balances the medicinal peat beautifully. Salted caramel, roasted almonds, and dried mango interweave with tarry rope, smoked lemon rind, and black pepper. The mouthfeel is oily and coating, delivering waves of complexity with each sip.

A velvety mouthfeel carries dried citrus peel and roasted coriander through the mid-palate, while a bitter gentian-like note adds backbone. The higher proof ensures the botanicals cut through without being overshadowed.
Finish: Long and warming, with lingering woodsmoke, dried herbs, and a peppery tingle that fades into sweet juniper resin. A whisper of charred orange peel persists on the exhale.

Nose: An arresting bouquet of crushed blackcurrant and dried garrigue herbs gives way to a distinctive smoky, ashen minerality that recalls a brushfire sweeping through Mediterranean scrubland. Layers of cedar, dried violet, and roasted bay leaf emerge with time, alongside a subtle hint of warm graphite.
